Olive Oil Scrambled Eggs with Chives

During a recent trip, I enjoyed one of the best breakfasts I’ve had in a long time—simple scrambled eggs that were incredibly light and flavorful, with just a hint of olive oil. They tasted rich without being greasy, and I couldn’t stop thinking about them when I got home.
I’ve been workshopping this recipe for the past few weeks, testing different ratios and techniques, and I think I’ve finally cracked the code. Using the farm-fresh eggs from my CSA‘s optional egg share and chives snipped from my patio pots, these eggs are packed with fresh flavor. The real secret, though, is a high-quality early-harvest extra virgin olive oil. Not only does it add incredible taste, but it’s also rich in polyphenols, which are known for their heart-health and digestive benefits. I made these eggs for my husband and son this morning, and they were an instant hit.
Ingredients:
- 3 large eggs
- 2 tsp. extra virgin olive oil, divided
- Fresh Chives
- Salt & pepper to taste

Instructions:
Preheat pan over medium low heat for 5-7 minutes to ensure pan is hot enough

In a tall container or bowl, combine:
- 3 eggs
- Chives
- 1 teaspoon olive oil
- Salt and pepper
Using an immersion blender (or blender, food processor, or whisk), blend until the mixture is pale, frothy, and the chives are finely incorporated.

Add the remaining 1 teaspoon olive oil to the preheated skillet and swirl to coat.
Pour in the egg mixture. Let it sit undisturbed for about 20–30 seconds until the edges begin to set.
Using a silicone spatula, slowly push the eggs from the edges toward the center, creating soft folds. Continue cooking gently, stirring occasionally.
Remove the pan from the heat when the eggs are mostly set but still look slightly glossy. The residual heat will finish cooking them.

Transfer immediately to a plate and garnish with additional chopped chives and a few grinds of black pepper.
These eggs pair beautifully with toasted sourdough, roasted tomatoes, or a simple green salad for a light breakfast or brunch.
