Easy Farmhouse Tomato Sauce

When the farm stand (or garden) is overflowing with fresh tomatoes, garlic, and basil, this simple sauce is the best way to let those flavors shine. It’s hearty, flexible, and down-to-earth—just the kind of recipe you can make on a busy weeknight or tuck away in jars or the freezer for colder months.

Ingredients:
- 8-10 fresh tomatoes, can be a variety of sizes or colors
- 6-8 cloves of garlic
- olive oil
- salt
- Fresh basil
How to Make It:
- Preheat your oven to 400°F.
- Place the tomatoes stem-side down and cut a small “X” in the bottom of each. Nestle them into a baking dish along with the whole garlic cloves.
- Drizzle generously with olive oil and sprinkle with salt.
- Roast for 20–30 minutes, until the garlic turns golden and the tomato skins start to loosen.
- Blend the tomatoes, garlic, and basil together until smooth—or leave it a little chunky if you like that rustic texture.
For Pasta Night:
Pour your sauce into a pan, stir in 3 tablespoons tomato paste, ¼ cup red wine (if you’ve got some open), and 2 tablespoons honey. Let it simmer until the kitchen smells wonderful and it’s thickened to your liking.
For Pizza Night:
Add the sauce to a pan with fresh, minced oregano, salt, pepper, and 2 tablespoons honey. Simmer for 15–20 minutes until it’s rich and spreadable.
Serve right away, or save a batch for winter—you’ll thank yourself later.
