Dill Pickles Spears

Earlier this year, my farm offered a selection of seedlings for purchase—perfect for starting a little home garden. Of course, I couldn’t resist. This week, both my CSA share and my porch garden delivered their first pickling cucumbers! Dill pickles are a staple in my fridge, and now I’ve got a fresh batch to last a while. Even better? The cucumbers, dill, and garlic all came straight from the farm or my garden.

Ingredients:
10-12 pickling cucumbers, cut in quarters, or in slices for pickle chips
3 garlic cloves finely chopped
3 tsp. corainder seeds
3 tsp. whole peppercorns
3 tsp. mustard seeds
large bunch of dill roughly chopped
2 cups water, hot
2 cups of white vinegar
1/4 cup sugar
1/4 cup sea salt
Begin by running canning jars through the dishwasher to sterilize, I will list some jar options below. While jars are being sterilized prepare the solution, combine hot water, vinegar, sugar and salt in a bowl and until sugar and salt dissolve. Then cut cucumbers into spears, dice garlic and roughly chop the dill.
Once jars are ready, place cucumber spears into the jars, I sometimes measure one cucumber for height, then trim the remaining spears to fit into the jars. You want to place them into the jar so that the jar is full, but still has room for the solution, seeds, dill and garlic.
When all the jars are filled, you can add the chopped dill, garlic, coriander, mustard and pepper evenly among the jars, Then top off with the vinegar solution, to about 1/2 inch from the top of the jar. Place tops on jars.
Store in refrigerator. The pickles will have slight flavor in 2-3 days, flavor will be best in about 1 week. If making pickle chips, slight flavor in 1 day, and best flavor in 4-5 days.
