Garlic Scape Marinade for the Grill

Garlic scapes can be funny. They are a softer and more subtle flavor than garlic, but can be a bit lost if cooked down. I like to make sauces with garlic scapes because they can hold the flavor pretty well. Pesto is another great use of garlic scapes, but a marinade can spread the flavor through the meat or vegetables before cooking.

Ingredients:
4-5 Garlic Scapes, I got mine in my CSA share this week.
1/4 cup parsley
1/4 cup Avocado Oil
1 lemon
salt and pepper to taste
Add garlic scapes, parsley, avocado oil, salt & pepper to food processor or blender. Use microplane grater to peel the rind off the lemon and add to food processor, then juice the lemon into the mixture. Blend until smooth. I marinade chicken breasts for 30-60 minutes, but seafood can be for a shorter time, 20-30 minutes. I am not a big meat eater, but I would marinade steaks for longer, 2-3 hours.
