Strawberry Rhubarb Salsa

This week at the farm, I was so happy to see a quart of strawberries, and 3 stalks of rhubarb. I instantly started thinking of making jam, or pie, but one of my favorite options for this early spring haul is a sweet fruit salsa. All of the produce I was able to pick up at the farm, and have some honey and mint at home to finish it off.

3 stalks rhubarb, diced
1 quart strawberries, hulled and diced
1 jalapeño pepper, diced*
1 tbsp. honey
1 lime, zested and juiced
fresh herbs, could use mint, cilantro, or basil
salt, to taste
Mix all ingredients in a bowl. If you let sit for a couple of hours before eating, it helps to mix the flavors. This is great served with regular tortilla chips, hint of lime tortilla chips, or my favorite choice is the cinnamon sugar pita chips.
*If you want a little of the heat from the jalapeño, you can add some of the seeds, otherwise you get a mild flavor with little to no heat.
