Marinated Radishes

Last spring, when I joined Theo’s Market Gardens CSA in Littleton, MA, I wasn’t sure what to do with the abundance of radishes in our early shares. We added them to salads, but still had plenty left. Since our family loves Asian rice bowls, I created a quick marinade for sliced radishes to add an extra burst of flavor.

Ingredients:
5-6 radishes.
1 tbsp. sesame oil
1 tsp. rice wine vinegar
.5 tsp. grated ginger root
.5 tsp. honey
.25 tsp red pepper flakes
small sprig of chives and cilantro
Slice radishes into thin slices, can use a mandolin, but if you don’t have one, you can slice thin with a sharp knife. Mix all remaining ingredients together in a bowl. Combine the dressing and the radishes, and let sit for about 20 minutes, or just as long as it takes to prepare meal. Can be served with salads, rice bowls, or just as a standalone snack.
